So, if you have a beautiful mango tree in your garden or backyard, adorned with green, ripe mangoes, simply pick a few and create this seasonal relish to cherish with your friends and family.

Ingredients:

2 raw/unripe mangoes (around 2 cups)

1.5 cups sugar

1/2 teaspoon salt (or according to your taste)

8 to 10 Raisins

2-3 green cardamom (crushed)

1/2 teaspoon Degi mirch

1/4 teaspoon Red chilli powder (optional)

1/4 teaspoon Black pepper

1/4 teaspoon Garam masala

1/2 teaspoon roasted Cumin seeds powder

How to make Mango Chutney

  1. Wash and peel the mangoes, then grate them into thin strings.

  2. In a pan, combine the grated mangoes and sugar. Cover the pan with a lid and set it aside for 30-40 minutes, allowing the sugar to dissolve and the mango to release its juices.

  3. Next, transfer the mango and sugar mixture to a heavy-duty wok or pan over low heat, and begin cooking the chutney. Keep stirring at regular intervals.

  4. Allow it to cook for 10-15 minutes until the sugar fully dissolves and the chutney acquires a glossy, glass-like appearance. At this point add salt, spices and raisins to the chutney.

  5. Mix the ingredients thoroughly while stirring, and continue cooking for an additional 2-3 minutes until it reaches a desired single-string consistency.

  6. Allow the mixture to cool down, then carefully transfer it into a sterilized glass container. Store the container in the refrigerator, and the chutney will maintain its quality for up to two months.
